# Lemon-Garlic Vinaigrette

Yields: 10 servings
* 3/4 cup olive oil
* 5 tablespoons red-wine vinegar
* 3 tablespoons lemon juice
* 1 1/2 tablespoons dijon mustard
* 1 clove garlic grated
* 3/4 teaspoon salt
* ground pepper to taste
1. Emulsify
Combine all ingredients except oil into a food processor. On medium or high setting, begin to process ingredients. Slowly drizzle in oil while processor continues to run. Store in air-tight jar for up to 1 week.
